Mini Orange Marmalade Cheesecakes

Creamy, citrusy and softly set — these no-bake mini cheesecakes let our thick cut orange marmalade shine, with visible ribbons of fruit running through each bite. Elegant enough for special occasions, simple enough for everyday.

Ingredients

150g digestive biscuits (or gingernuts)

60g unsalted butter, melted

250g full-fat cream cheese, at room temperature

120ml double cream

60g icing sugar

Zest of 1 orange

1 tsp vanilla extract

3 tbsp La Vieja Fábrica Thick Cut Orange Marmalade

Extra marmalade, to finish

Method

1.

Crush the biscuits into fine crumbs and mix with the melted butter. Spoon into the bases of small glasses or ramekins and press down lightly. Chill while you prepare the filling.

In a bowl, beat the cream cheese, icing sugar, orange zest and vanilla until completely smooth. Pour in the double cream and whip until thick, fluffy and softly set.

Gently fold through the marmalade, keeping visible pieces and swirls. Spoon or pipe the mixture over the biscuit bases, smooth the tops and chill for at least 2–3 hours until softly set.

4.

Finish with a spoonful of marmalade just before serving and garnish if desired.
