Marmalade Toffee Apples

A nostalgic autumn fairground favourite with a citrus twist. Crisp Granny Smith apples are coated in a glossy toffee infused with St Clement’s marmalade, adding subtle notes of orange and lemon that pair beautifully with the sweet caramel shell.

Ingredients

6 Granny Smith apples

300g caster sugar

100ml water

1 tbsp golden syrup

2 tbsp La Vieja Fabrica St Clement's Marmalade

Optional decoration: 50g chopped toasted nuts, gold sprinkles, dried orange zest

Method

1.

Wash and thoroughly dry the apples. Remove any wax coating by briefly dipping them in boiling water and drying well.

2.

Insert a wooden lolly stick or toffee apple stick firmly into the top of each apple.

3.

Line a baking tray or board with baking paper.

4.

Place the caster sugar, water and golden syrup into a saucepan over a medium heat.

5.

Stir gently until the sugar has dissolved, then stop stirring.

6.

Allow the mixture to bubble until it turns a rich amber colour.

7.

Remove from the heat and carefully stir through the marmalade until fully incorporated.

8.

Working quickly, tilt the pan and dip each apple into the toffee, turning to coat evenly.

9.

If using nuts, immediately dip the bottom third of the apple into the chopped nuts before the toffee sets.

10.

Place the coated apples onto the lined baking paper and leave to cool and harden completely.
