Marmalade Upside Down Cake

This stunning cake tastes even better than it looks!  Made with La Vieja Fábrica St Clements marmalade, it’s light yet perfectly moist with that gorgeous sticky crumb that makes every bite completely irresistible.

Ingredients

2 tbsp granulated sugar and butter for greasing tin

200g self raising flour

200g granulated sugar

200g baking spread or soft butter

4 medium eggs

2 tbsp La Vieja Fábrica St Clements Marmalade

1 tsp baking powder

1 large orange cut into thin slices

Zest of 1 large orange

Method

1.

Preheat oven to 160c fan and whilst heating, grease a 20cm baking tin, then sprinkle the base with 2 tbsp of sugar

2.

Slice the orange into thin slices, then arrange them on the base of the tin, I have mine overlapping but you can lay them flat

3.

In a large bowl add the sugar and orange zest. Use your fingertips to rub in the zest and sugar to release the flavour

4.

Add the baking spread/butter and mix together until light then add in two tablespoons of the marmalade and mix till combined

5.

Add in the eggs one at a time, adding one tablespoon of the flour with each addition, to avoid the mix curdling

6.

Once all the eggs are added, pour in the remaining flour and baking powder, and mix until fully combined

7.

Pour the batter on top of the oranges in the tin, place into the middle shelf of the oven and bake for 1 hour - the top should be golden and a skewer come out clean

8.

Allow to cool for a few minutes then carefully turn out onto a plate while still warm

9.

Gently heat some more of the St Clements marmalade on the stove until it’s runny then pour over the top of the cake for a beautiful glaze and delicious sticky orange flavour

10.

Serve with ice cream and enjoy.
