Sweet & Spicy Prawn and Halloumi Tacos

These vibrant tacos pair juicy prawns and golden halloumi with a sweet and spicy sesame sauce made using La Vieja Fabrica marmalade.  The marmalade adds a delicious zesty tang that perfectly balances the warming spice, creating a fresh and flavour-packed dish ideal for al fresco dining.

Ingredients

150g prawns

1 block halloumi

8 Tacos

For the salsa: 2 diced peaches,

3 spring onions finely chopped

1 red chilli finely diced and a handful of coriander finely chopped

1 avocado and lime juice

For the sauce: 50g La Vieja Fabrica Fine Cut Marmalade

2.5 tbsp Sweet Chilli Sauce

2 tsp Sesame Oil

½ tsp Fish Sauce

½ tsp White Wine Vinegar

Pinch of Aleppo Flakes

Method

1.

Make the sauce by mixing all the wet ingredients.

2.

Use half the sauce to marinate the prawns and/or the halloumi for an hour in the fridge. You can use both or just use the halloumi for a veggie option.

3.

Make a simple salsa with the diced peaches, finely chopped spring onions, finely diced red chilli, a handful of coriander finely chopped. Add a generous spoonful of the remaining sauce.

4.

Smash the avocado with lime juice and salt.

5.

Pan-fry your prawns and halloumi for a couple of minutes on each side, ensuring the prawns are fully cooked.

6.

Warm some corn tortillas in a pan or oven and spread them with some smashed avocado.

7.

Fill the tacos with the cooked prawns and/or halloumi before topping them with the salsa.

8.

Drizzle the tacos with the remaining sauce for a spicy, zesty, sunny delight.
