Marmalade Glazed Salmon with Crushed New Potatoes & Dill

This delicious sticky glazed salmon uses La Vieja Fábrica Fine Cut Marmalade to deliver a rich, sweet-tangy flavour that perfectly balances savoury notes for an irresistible finish.

Ingredients

2 salmon fillets

3 tbsp La Vieja Fábrica Seville Orange Fine Cut Marmalade,

1 tbsp soy sauce

1 tsp wholegrain mustard

1 garlic clove (grated)

½ tsp black pepper

Olive oil

500g new potatoes

1 tbsp butter

Sea salt & black pepper

Zest of ½ lemon

Handful fresh dill

Method

1.

Boil potatoes until tender, drain, then lightly crush.

2.

Toss crushed potatoes with olive oil, butter, lemon zest, salt & pepper. Stir in most of the dill.

3.

Mix marmalade, soy, mustard, garlic & pepper to make glaze.

4.

Pan-fry salmon skin-side down 4–5 min, flip, spoon over glaze, cook 2–3 min until sticky & glossy.

5.

Serve the salmon over the crushed potatoes & add your vegetable of choice.

6.

Finish with remaining dill & a squeeze of lemon.
