Mini Marmalade Loaf Cakes

These mini citrus loaves are a bright twist on classic sponge. La Vieja Fábrica St Clements Marmalade blends orange and lemon for vibrant flavour. Lemon lightens the sponge, peel flecks look beautiful when sliced, and a warm marmalade glaze gives a glossy finish—perfect for gifting or afternoon tea.

Ingredients

150g self-raising flour

125g unsalted butter, softened

125g caster sugar

2 medium eggs

3 tbsp La Vieja Fábrica St Clements Marmalade

1 tbsp milk

Zest of 1 orange

4–5 tbsp warmed marmalade (for brushing)

2 tbsp demerara sugar

Method

1.

Preheat oven to 170°c fan and line mini loaf cases on a baking tray.

2.

Cream butter and sugar together until pale and fluffy.

3.

Beat in the eggs one at a time.

4.

Fold in the flour, then stir in the milk, orange zest and marmalade.

5.

Spoon into the cases, filling about 3/4 full

6.

Bake for 18-22 minutes until golden and a skewer comes out clean.

7.

While still warm, gently heat a few tablespoons of marmalade and brush generously over the tops for that glossy finish.

8.

Finish with a sprinkle of demerara sugar
