The bitter orange is more than just an ingredient – it stands as a cherished symbol of Seville. Every spring, thousands of orange trees burst into bloom along the city’s streets, filling the air with their fragrant blossoms and capturing the essence of Andalusian life.
Therefore, it’s only fitting that La Vieja Fábrica calls this region home. Our marmalades are crafted in our own factory, just 45 minutes south of Seville. Our oranges are sourced from trusted growers and harvested at their peak to ensure exceptional flavour in every jar.
The secret of Seville oranges
From March to May, tourists flock to Seville to admire the white blossoms lining the streets. But it’s the hot, dry Spanish summer that nurtures the growth of these exceptional oranges. Growers begin harvesting in a short window between late December to February. Harvest timing is crucial to ensure each orange is picked at peak ripeness – capturing the vibrant flavour needed to craft the very best marmalade.
Our gentle preparation process
We make our marmalade the traditional way – slowly cooking it at low temperatures to preserve the full, natural flavour of the fruit. By using a high fruit content, we bring out the deepest, richest taste in every batch.
