Marmalade Steam Puddings

As we move into the autumn season, I love to make cosier bakes, and this one is special! It’s using my favourite La Vieja Fabrica marmalade. These sponges have the most stunning texture and flavour and are the perfect transitional bake from summer to autumn!

Prep time 20 minutes

Cook time 40 minutes

Ingredients

4 tablespoons La Vieja Fabrica Marmalade

150g unsalted butter

140g self-raising flour

120g caster sugar

1 tsp cinnamon

Zest of 1 large orange

1 egg

100ml milk

1 tsp vanilla extract

Method

1.

Set oven to 140c fan

Melt the butter in the microwave and leave to cool

3.

Grease 4 250ml pudding basins (or 8 100ml)

Add a tablespoon of La Vieja Fabrica marmalade to each tin, then set aside

5.

In a bowl add the flour, sugar, cinnamon and orange zest, stir then set aside.

6.

In another bowl add the melted butter, milk, vanilla and egg, whisk to combine then add to the dry mixture and mix till fully combined.

7.

Divide the batter between the pudding basins, place tins on a tray then place in the oven to bake for 40 minutes.

8.

Allow to cool for a few minutes then turn out onto a plate and serve with vanilla ice cream or warm custard! These are SO delicious it’s hard to only eat one.

9.

Tip: if you let them cool too much and they won’t turn out, pop them back in the oven for a couple of minutes. You may also need to rub a knife around the tin if it’s got a little stuck.
